Cream Cheese Stuffed Mini Peppers

Ingredients

  • 1 to 1.5 pounds sweet mini peppers, washed and dried
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • A small bunch of chives, chopped fine
  • A pinch of salt, to taste
  • Freshly cracked pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the mini peppers and remove the seeds.
  3. In a bowl, mix together cream cheese, cheddar cheese, chopped chives, salt, and pepper until well combined.
  4. Stuff each mini pepper with the cheese mixture.
  5. Place the stuffed peppers on a baking sheet.
  6. Bake for 15-20 minutes or until the peppers are tender and the cheese is bubbly.
  7. Serve warm.
