Ingredients
1 to 1.5 pounds sweet mini peppers, washed and dried
8 ounces cream cheese, softened
1 cup sharp cheddar cheese, shredded
A small bunch of chives, chopped fine
A pinch of salt, to taste
Freshly cracked pepper, to taste

Instructions
Preheat your oven to 375°F (190°C).
Cut the tops off the mini peppers and remove the seeds.
In a bowl, mix together cream cheese, cheddar cheese, chopped chives, salt, and pepper until well combined.
Stuff each mini pepper with the cheese mixture.
Place the stuffed peppers on a baking sheet.
Bake for 15-20 minutes or until the peppers are tender and the cheese is bubbly.
Serve warm.
