Creamy Chicken Mushroom Spinach Skillet

Ingredients
2 Chicken breasts, fresh
8 oz Mushrooms, cleaned and sliced
4 cups Spinach, fresh leaves
1 cup Heavy cream, full fat
1/2 cup Parmesan cheese, grated or shredded
3 cloves Garlic, minced
2 tbsp Olive oil
Salt, to taste
Pepper, to taste

Instructions
Heat
olive oil over medium heat in a large skillet.
Season
the chicken breasts with salt and pepper, then add to the skillet, cooking until golden brown (about 6-8 minutes per side).
Remove
the chicken and let it rest for a couple of minutes.
Add
garlic and mushrooms to the same skillet, cooking until mushrooms are tender.
Stir
in the heavy cream and Parmesan cheese, then add spinach and let it wilt.
Return
the chicken to the skillet, coating it in the creamy sauce, and cook for an additional 2-3 minutes.
Serve
warm over rice, mashed potatoes, or pasta.
Notes
Ensure the pan is hot enough when cooking the chicken to avoid steaming. Taste and adjust seasoning as needed.
