- 2 Chicken breasts, fresh
- 8 oz Mushrooms, cleaned and sliced
- 4 cups Spinach, fresh leaves
- 1 cup Heavy cream, full fat
- 1/2 cup Parmesan cheese, grated or shredded
- 3 cloves Garlic, minced
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil over medium heat in a large skillet.
- Season the chicken breasts with salt and pepper, then add to the skillet, cooking until golden brown (about 6-8 minutes per side).
- Remove the chicken and let it rest for a couple of minutes.
- Add garlic and mushrooms to the same skillet, cooking until mushrooms are tender.
- Stir in the heavy cream and Parmesan cheese, then add spinach and let it wilt.
- Return the chicken to the skillet, coating it in the creamy sauce, and cook for an additional 2-3 minutes.
- Serve warm over rice, mashed potatoes, or pasta.
Notes
Ensure the pan is hot enough when cooking the chicken to avoid steaming. Taste and adjust seasoning as needed.
