Ingredients

- 2 cups of uncooked pasta
- 1 pound of chicken breasts
- 1 cup of heavy cream
- 1 cup of chicken broth
- 1 cup of grated Parmesan cheese
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 cup of mixed vegetables (optional)
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add chicken broth, garlic powder, salt, and pepper.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
- Shred the chicken and return it to the crockpot.
- Stir in the heavy cream, Parmesan cheese, and mixed vegetables if using.
- Add the uncooked pasta and mix well.
- Cook on high for an additional 30 minutes until the pasta is tender.
- Serve warm and enjoy!
Notes
You can substitute chicken breasts for thighs for a juicier option, and use half and half instead of heavy cream to cut calories. Leftover rotisserie chicken can also be used for a quicker meal.
