Description

A fuss-free, creamy chicken pasta recipe made in a crockpot that’s perfect for busy weeknights and cozy weekends.

Ingredients

Scale
  • 2 cups of uncooked pasta
  • 1 pound of chicken breasts
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of grated Parmesan cheese
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1 cup of mixed vegetables (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add chicken broth, garlic powder, salt, and pepper.
  3. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  4. Shred the chicken and return it to the crockpot.
  5. Stir in the heavy cream, Parmesan cheese, and mixed vegetables if using.
  6. Add the uncooked pasta and mix well.
  7. Cook on high for an additional 30 minutes until the pasta is tender.
  8. Serve warm and enjoy!

Notes

You can substitute chicken breasts for thighs for a juicier option, and use half and half instead of heavy cream to cut calories. Leftover rotisserie chicken can also be used for a quicker meal.
