Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers and onions.
  2. In a separate bowl, mix together Greek yogurt, lemon juice, minced garlic, fresh dill, salt, and pepper.
  3. Pour the dressing over the cucumbers and onions and toss to combine.
  4. Refrigerate for at least 10 minutes before serving to let flavors meld.
  5. Serve chilled as a side dish.

Notes

  1. Keep the cucumber slices thin for the best texture. You can substitute Greek yogurt with sour cream or a mix of mayo and yogurt if desired.
