- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh chopped parsley for garnish (optional)
Instructions
- Slice chicken breasts in half horizontally or pound to even thickness and season with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat and sear chicken until golden and cooked through, about 4 to 5 minutes per side. Do not overcrowd the pan.
- Remove chicken from the skillet and set aside. Lower heat, then add butter and garlic, sautéing until fragrant, about 30 seconds to 1 minute.
- Pour in the cream and stir to deglaze the pan, scraping up browned bits. Add Parmesan cheese and simmer until the sauce thickens, about 2 to 3 minutes.
- Return chicken to the skillet, simmer for another 2 to 3 minutes, and spoon sauce over the chicken. Finish with chopped parsley if desired.
Notes
Avoid overcooking the sauce; if it looks greasy, add a splash of cream or water. Freshly grated Parmesan produces the best results.
