  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the diced chicken breast and cook until browned and no longer pink, about 5-7 minutes.
  3. Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant.
  4. Lower the heat and stir in the Greek yogurt and grated Parmesan cheese until well combined.
  5. Add the cooked pasta to the sauce and toss until the pasta is evenly coated.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.
