Creamy Ground Turkey Spinach Pasta

Ingredients

  • 8 ounces penne pasta, uncooked
  • 1 pound ground turkey
  • 4 cups baby spinach, packed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups low-sodium chicken broth
  • 1 cup half-and-half
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 0.75 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon crushed red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add ground turkey, season with salt and pepper, and cook until browned, about 6 minutes.
  5. Pour chicken broth and half-and-half into the skillet. Stir to combine and bring to a gentle simmer.
  6. Add cooked penne pasta, baby spinach, and crushed red pepper flakes. Fold in gently until spinach is wilted.
  7. Stir in grated Parmesan cheese until fully melted. Serve immediately.

Notes

  1. For a one-pot version, brown the turkey, add broth and uncooked pasta, then add spinach, cream, and cheese at the end.
