- 8 ounces penne pasta, uncooked
- 1 pound ground turkey
- 4 cups baby spinach, packed
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1.5 cups low-sodium chicken broth
- 1 cup half-and-half
- 0.5 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 0.75 teaspoon kosher salt
- 0.25 teaspoon ground black pepper
- 0.5 teaspoon crushed red pepper flakes
Instructions
- Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add ground turkey, season with salt and pepper, and cook until browned, about 6 minutes.
- Pour chicken broth and half-and-half into the skillet. Stir to combine and bring to a gentle simmer.
- Add cooked penne pasta, baby spinach, and crushed red pepper flakes. Fold in gently until spinach is wilted.
- Stir in grated Parmesan cheese until fully melted. Serve immediately.
Notes
For a one-pot version, brown the turkey, add broth and uncooked pasta, then add spinach, cream, and cheese at the end.
