Ingredients

  • 1 lb sausage (pork, chicken, or turkey)
  • 4 large potatoes, diced (Russets or Yukon Gold)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • 1 cup cheddar cheese (optional)
  • Salt and pepper to taste
  • Optional toppings: green onions, bacon bits

Instructions

  1. In a large pot or Crock Pot, brown the sausage over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Stir in the diced potatoes and chicken broth.
  4. Bring to a boil, then reduce heat and simmer for about 20-30 minutes, or until potatoes are tender.
  5. Stir in the heavy cream and cheddar cheese (if using) until melted and combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with optional toppings if desired.
