Creamy Vegan Carrot Potato Soup

Ingredients

  • 2 cups carrots, chopped
  • 2 cups potatoes, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • Salt and pepper to taste
  • Olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until translucent.
  2. Add chopped carrots and potatoes, stirring for a few minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer until vegetables are tender, about 20 minutes.
  4. Add coconut milk and blend the soup until smooth using an immersion blender or transferring to a blender.
  5. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

  1. Blend hot soup carefully in a blender to avoid pressure pops. Reserve some veggies before blending for a chunkier texture.
