Creamy Vegan Carrot Potato Soup

Ingredients
2 cups carrots, chopped
2 cups potatoes, cubed
1 onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 can coconut milk
Salt and pepper to taste
Olive oil
Fresh herbs for garnish (optional)

Instructions
In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until translucent.
Add chopped carrots and potatoes, stirring for a few minutes.
Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer until vegetables are tender, about 20 minutes.
Add coconut milk and blend the soup until smooth using an immersion blender or transferring to a blender.
Season with salt and pepper to taste.
Serve warm, garnished with fresh herbs if desired.
Notes
Blend hot soup carefully in a blender to avoid pressure pops. Reserve some veggies before blending for a chunkier texture.
