Creamy Vegan Carrot Potato Soup

Ingredients

  • 2 cups carrots, chopped
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, then sauté until translucent.
  2. Add chopped carrots and potatoes, then stir everything together.
  3. Pour in the vegetable broth, season with salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the veggies are tender.
  4. Remove from heat and blend until smooth using an immersion blender or a standard blender.
  5. Stir in the coconut milk and lemon juice, then heat through if needed.
  6. Serve warm and enjoy!

Notes

  1. Drizzle a bit of extra coconut milk on top for an extra creamy finish.
