Creamy Vegan Marry Me Pasta That'll Steal Your Heart

Ingredients

  • 12 oz Pasta (gluten-free if desired)
  • 1 tablespoon Olive Oil
  • 4 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 Bell Pepper, sliced
  • 2 cups Baby Spinach
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 2 tablespoons Nutritional Yeast
  • 1 tablespoon Italian Seasoning
  • Salt and Pepper, to taste
  • Red Pepper Flakes, to taste (optional)
  • Fresh Basil or Parsley, for garnish

Instructions

  1. Boil a pot of water with a pinch of salt and add the pasta according to package instructions.
  2. In a large skillet, heat olive oil over medium heat, add minced garlic and chopped onion, and sauté for about 3-4 minutes until translucent.
  3. Add the sliced bell pepper and cook for about 5 minutes until tender.
  4. Add baby spinach and cook for another 2 minutes until wilted.
  5. Pour in coconut milk and vegetable broth, stirring to combine.
  6. Season with nutritional yeast, Italian seasoning, salt, and pepper, adding red pepper flakes for a kick if desired.
  7. Drain the pasta and toss it with the creamy mixture until evenly coated.
  8. Let it simmer for a couple of minutes to combine flavors, adjusting salt and pepper to taste.
  9. Serve garnished with fresh basil or parsley.

Notes

  1. Feel free to customize with your favorite vegetables or pasta alternatives. This recipe can easily be doubled.
