Ingredients
12 oz Pasta (gluten-free if desired)
1 tablespoon Olive Oil
4 cloves Garlic, minced
1 medium Onion, chopped
1 Bell Pepper, sliced
2 cups Baby Spinach
1 can Coconut Milk
1 cup Vegetable Broth
2 tablespoons Nutritional Yeast
1 tablespoon Italian Seasoning
Salt and Pepper, to taste
Red Pepper Flakes, to taste (optional)
Fresh Basil or Parsley, for garnish

Instructions
Boil a pot of water with a pinch of salt and add the pasta according to package instructions.
In a large skillet, heat olive oil over medium heat, add minced garlic and chopped onion, and sauté for about 3-4 minutes until translucent.
Add the sliced bell pepper and cook for about 5 minutes until tender.
Add baby spinach and cook for another 2 minutes until wilted.
Pour in coconut milk and vegetable broth, stirring to combine.
Season with nutritional yeast, Italian seasoning, salt, and pepper, adding red pepper flakes for a kick if desired.
Drain the pasta and toss it with the creamy mixture until evenly coated.
Let it simmer for a couple of minutes to combine flavors, adjusting salt and pepper to taste.
Serve garnished with fresh basil or parsley.
