- 12 oz Pasta (gluten-free if desired)
- 1 tablespoon Olive Oil
- 4 cloves Garlic, minced
- 1 medium Onion, chopped
- 1 Bell Pepper, sliced
- 2 cups Baby Spinach
- 1 can Coconut Milk
- 1 cup Vegetable Broth
- 2 tablespoons Nutritional Yeast
- 1 tablespoon Italian Seasoning
- Salt and Pepper, to taste
- Red Pepper Flakes, to taste (optional)
- Fresh Basil or Parsley, for garnish
Instructions
- Boil a pot of water with a pinch of salt and add the pasta according to package instructions.
- In a large skillet, heat olive oil over medium heat, add minced garlic and chopped onion, and sauté for about 3-4 minutes until translucent.
- Add the sliced bell pepper and cook for about 5 minutes until tender.
- Add baby spinach and cook for another 2 minutes until wilted.
- Pour in coconut milk and vegetable broth, stirring to combine.
- Season with nutritional yeast, Italian seasoning, salt, and pepper, adding red pepper flakes for a kick if desired.
- Drain the pasta and toss it with the creamy mixture until evenly coated.
- Let it simmer for a couple of minutes to combine flavors, adjusting salt and pepper to taste.
- Serve garnished with fresh basil or parsley.
