3 cups vegetable oil (for frying)
1 pound okra, finely chopped
1 cup onion, finely chopped
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup water
1 egg
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 cup cornmeal

Instructions
Heat 1 inch of vegetable oil in a large skillet over medium-high heat to 375°F (190°C).
In a large bowl, mix chopped okra, onion, salt, pepper, water, and egg until well combined.
In a separate bowl, whisk flour, baking powder, and cornmeal.
Gradually fold the dry ingredients into the okra mixture until just combined. Do not overmix.
Drop spoonfuls of batter into hot oil without overcrowding the pan.
Fry for about 2 minutes per side, until golden brown.
Remove with a slotted spoon and drain on paper towels.
Serve warm for best texture and flavor.
Notes
