Ingredients

- 3 cups vegetable oil (for frying)
- 1 pound okra, finely chopped
- 1 cup onion, finely chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup water
- 1 egg
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup cornmeal
Instructions
- Heat 1 inch of vegetable oil in a large skillet over medium-high heat to 375°F (190°C).
- In a large bowl, mix chopped okra, onion, salt, pepper, water, and egg until well combined.
- In a separate bowl, whisk flour, baking powder, and cornmeal.
- Gradually fold the dry ingredients into the okra mixture until just combined. Do not overmix.
- Drop spoonfuls of batter into hot oil without overcrowding the pan.
- Fry for about 2 minutes per side, until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm for best texture and flavor.
Notes
These are best served immediately but can be kept warm in the oven at low heat. Try pairing with a spicy dipping sauce or yogurt-based dip.
