Ingredients

  • 1 cucumber, diced
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Combine the diced cucumber, avocado, and cherry tomatoes in a large bowl.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. Toss gently to combine all ingredients, being careful not to mash the avocado.
  4. Garnish with fresh parsley or cilantro.
  5. Serve immediately and enjoy!

Notes
