  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Pat the chicken dry first.
  2. Heat oil in a large skillet over medium heat and sear chicken for 3-4 minutes per side until golden brown. Remove from the pan and set aside.
  3. Add uncooked rice to the same pan and toast for 1-2 minutes, stirring to prevent sticking.
  4. Pour in chicken broth, BBQ sauce, and honey. Stir to combine and scrape up any browned bits.
  5. Return chicken to the pan, nestling it into the rice mixture. Bring to a gentle boil, then reduce heat to low and cover.
  6. Simmer for 15 minutes until rice is tender and chicken is fully cooked.
  7. Add mixed vegetables, cover again, and cook an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with chopped green onions or parsley, and serve hot.

For best results, avoid over-stirring the rice to keep it fluffy.
