Ingredients

  • 1/2 lb mini sweet peppers
  • 1/4 cup fat-free feta cheese
  • 2 light Laughing Cow cheddar cheese wedges
  • Everything bagel seasoning, to taste
  • 1/2 tsp chili crunch, oil drained
  • Optional: Green onions or fresh herbs like parsley or cilantro for garnish

Instructions

  1. Prepare the Peppers: Slice mini peppers in half lengthwise and remove seeds. Lay them out on a platter facing up.
  2. Mix the Cheese: Combine fat-free feta and Laughing Cow cheddar cheese in a bowl, breaking the wedges up for easier blending.
  3. Warm the Cheese Mixture: Microwave the cheese mixture for about 30 seconds to soften. Add everything bagel seasoning and chili crunch, mixing until combined. Adjust seasoning to taste.
  4. Stuff the Peppers: Fill each pepper half with the cheese mixture, packing gently.
  5. Serve and Enjoy: Serve immediately, garnished with herbs or green onions if desired.

Notes

  1. Best served fresh. Can be prepared ahead, but stuff the peppers right before serving for the best texture.
