- 3 bell peppers (various colors if desired)
- 6 eggs
- cherry tomatoes (chopped)
- red onion (diced)
- olives (chopped)
- feta cheese (crumbled)
- nitrate-free deli turkey meat (chopped)
- cheddar cheese (shredded)
- chives (chopped)
- bacon (cooked and crumbled)
- corn (organic frozen, thawed or fresh)
- sea salt and fresh ground black pepper (to taste)
- cooking spray
Instructions
- Preheat the oven to 375°F.
- Cut the peppers in half vertically and remove the seeds.
- Place the peppers on a baking tray and lightly spray with cooking spray, seasoning with salt and pepper.
- Roast for 10 minutes.
- Carefully crack an egg into each pepper half.
- Add your desired toppings such as tomatoes, onions, olives, feta, deli meat, cheddar, chives, bacon, and corn.
- Return to the oven and bake for 12-15 minutes until egg whites are set.
- Season with salt and pepper and serve hot.
