Instructions

  1. Pat chicken dry and season with salt, pepper, and oregano on both sides.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat until shimmering.
  3. Sear the chicken for 5 to 6 minutes per side until golden and cooked through.
  4. Remove chicken to a plate and cover to rest.
  5. In the same skillet, add remaining olive oil and sauté garlic for 30 seconds.
  6. Add orzo and toast for 1-2 minutes, stirring continuously.
  7. Pour in chicken broth, bring to a simmer, cover, and cook for 8 to 10 minutes until orzo is tender.
  8. Stir in sun dried tomatoes, spinach, lemon zest, and lemon juice. Cook for 1 more minute until spinach wilts.
  9. Slice chicken and return to the pan, nesting slices into the orzo.
  10. Toss everything together, adjust seasoning, garnish with parsley, and serve warm.

Notes

  1. Let chicken rest before slicing to retain moisture. Adjust seasoning to taste with salt and lemon.
