Ingredients
4 large ripe red tomatoes, sliced about 1/2 inch thick
1 cup all-purpose flour
2 large eggs, beaten
1 cup cornmeal
1 cup panko breadcrumbs
2 teaspoons salt, plus more for seasoning
1 teaspoon black pepper, plus more for seasoning
1/4 teaspoon paprika (optional)
Vegetable oil, for frying

Instructions
Set up a breading station using three shallow bowls: flour in one, beaten eggs in another, and a mix of cornmeal, panko, salt, pepper, and optional paprika in the third.
Coat each tomato slice in flour, then dip in egg, and finally press into the breadcrumb mixture until fully coated.
Heat vegetable oil about 1/2 inch deep in a skillet over medium heat.
Fry tomato slices in batches, 2–3 minutes per side, until golden and crispy.
Transfer to a wire rack or paper towel-lined plate. Season with extra salt and pepper.
Serve immediately for the best crunch and flavor.
Notes
