- 4 large ripe red tomatoes, sliced about 1/2 inch thick
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup cornmeal
- 1 cup panko breadcrumbs
- 2 teaspoons salt, plus more for seasoning
- 1 teaspoon black pepper, plus more for seasoning
- 1/4 teaspoon paprika (optional)
- Vegetable oil, for frying
Instructions
- Set up a breading station using three shallow bowls: flour in one, beaten eggs in another, and a mix of cornmeal, panko, salt, pepper, and optional paprika in the third.
- Coat each tomato slice in flour, then dip in egg, and finally press into the breadcrumb mixture until fully coated.
- Heat vegetable oil about 1/2 inch deep in a skillet over medium heat.
- Fry tomato slices in batches, 2–3 minutes per side, until golden and crispy.
- Transfer to a wire rack or paper towel-lined plate. Season with extra salt and pepper.
- Serve immediately for the best crunch and flavor.
