Garlic Butter Steak Bites and Potatoes Delight

Ingredients

  • 1/4 cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into 1/2 inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon sea salt, plus more to taste
  • 1/4 teaspoon ground black pepper, plus more to taste
  • 1 1/4 lb sirloin steak, cut into 1/2 inch cubes

Instructions

  1. Heat a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee, letting it shimmer.
  2. Add the potatoes, minced garlic, dried thyme, oregano, sea salt, and ground black pepper. Stir to coat.
  3. Cook for 2-3 minutes before stirring to create a golden crust, then continue cooking until potatoes are golden brown and fork-tender (about 8-10 minutes).
  4. Remove the potatoes and browned bits from the pan. Keep the browned bits for flavor.
  5. Increase heat to medium-high and add the remaining ghee. Sear the steak cubes in a single layer for 2-3 minutes without moving them.
  6. Flip steak and sear the other sides for another 2 minutes or until your desired doneness.
  7. Add remaining ghee and another clove or two of minced garlic. Toss steak for 30 seconds to combine flavors.
  8. Return the potatoes to the skillet, tossing together for a minute. Taste and adjust salt and pepper as needed.
  9. Remove from heat, let it rest for a minute, and serve directly from the skillet or transfer to a platter. Garnish with parsley if desired.

Notes

  1. Preheat the pan for best results. Avoid overcrowding the pan to prevent steaming. Skip burning garlic by adding some later with steak.
