Garlic and Herb Grilled Chicken and Veggies

Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried herbs (thyme, oregano, rosemary)
  • Salt and pepper to taste
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes

Instructions

  1. In a large bowl, combine olive oil, minced garlic, dried herbs, salt, and pepper.
  2. Add the chicken breasts to the bowl and coat evenly with the marinade.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes per side, or until fully cooked.
  5. During the last 5 minutes of grilling, add the sliced vegetables to the grill.
  6. Once everything is cooked through, remove from the grill and let rest for a few minutes before serving.

Notes

  1. Great as leftovers, served cold or reheated. Add lemon juice or hot sauce for extra flavor.
