Ingredients

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced potatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss to coat the potatoes evenly.
  3. Arrange the seasoned potatoes in a single layer on a baking sheet.
  4. Place the chicken breasts on top of the potatoes and sprinkle with grated Parmesan cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
  6. Garnish with fresh parsley before serving.

Notes

  1. Use fresh garlic for the best flavor. Ensure not to overcrowd the baking sheet for crispy potatoes.
