Garlic Parmesan Chicken Meatloaf

Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat until soft, about 5 minutes.
  3. In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the Parmesan cheese until combined.
  4. Shape the mixture into a loaf form in the greased baking dish.
  5. Sprinkle remaining Parmesan cheese on top.
  6. Bake for 45 to 50 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before slicing.

Notes

  1. Serve with mashed potatoes or roasted veggies. Letting the meatloaf rest is essential for neat slices.
