A quick and easy one-skillet meal featuring juicy chicken and crunchy potatoes enveloped in a garlicky parmesan sauce.

- 2 chicken breasts, cubed
- 4 to 5 small or medium potatoes, cubed
- Olive oil, for tossing the potatoes
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
- Paprika, to taste
- 2 tablespoons butter
- 1/2 teaspoon salt, for seasoning the chicken
- 1/2 teaspoon pepper, for seasoning the chicken
- 1 teaspoon paprika, for seasoning the chicken
- 1 teaspoon onion powder, for seasoning the chicken
- 1 teaspoon Italian seasoning, for seasoning the chicken
- 2 tablespoons minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce, use as desired
- 1 cup shredded mozzarella cheese
Instructions
- Wash and peel the potatoes, then cut them into small cubes. Toss the cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Preheat the air fryer to 400°F and cook the potatoes for about 20 minutes, shaking the basket a couple of times for even cooking.
- While the potatoes cook, cut the chicken breasts into small cubes. In a bowl, season the chicken with salt, pepper, paprika, onion powder, and Italian seasoning.
- Heat butter in a skillet over medium high heat. Add the seasoned chicken cubes and cook until fully cooked through.
- Stir in minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet and cook for an additional 1-2 minutes.
- Add the air fried potatoes to the skillet with the chicken and toss everything together.
- Sprinkle shredded mozzarella cheese on top and cover the skillet until the cheese melts or broil until bubbly and golden.
Notes
For added flavor, toss in parsley or a squeeze of lemon before serving. Adjust the amount of Garlic Parmesan Sauce to taste.
