Ingredients
2 cups cooked quinoa or rice
1 lb chicken breast, diced
2 tbsp olive oil
1 tsp dried oregano
1 tsp garlic powder
Salt and pepper to taste
1 cucumber, diced
1 cup cherry tomatoes, halved
1 red onion, diced (optional)
1 bell pepper, diced
Feta cheese, crumbled
Fresh parsley, chopped
For Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated
1 clove garlic, minced
1 tbsp lemon juice
Salt to taste

Instructions
In a bowl, mix chicken with olive oil, oregano, garlic powder, salt, and pepper. Grill or sauté until cooked through.
Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Chill briefly if time allows.
In serving bowls, layer quinoa or rice, cooked chicken, diced cucumbers, cherry tomatoes, red onion, and bell pepper.
Top with crumbled feta and fresh parsley. Served with tzatziki sauce on the side.
Notes
For a vegetarian option, swap chicken for chickpeas or grilled halloumi. For a quicker prep, use pre-cooked rotisserie chicken.
