- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, diced (optional)
- 1 bell pepper, diced
- Feta cheese, crumbled
- Fresh parsley, chopped
- For Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt to taste
Instructions
- In a bowl, mix chicken with olive oil, oregano, garlic powder, salt, and pepper. Grill or sauté until cooked through.
- Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Chill briefly if time allows.
- In serving bowls, layer quinoa or rice, cooked chicken, diced cucumbers, cherry tomatoes, red onion, and bell pepper.
- Top with crumbled feta and fresh parsley. Served with tzatziki sauce on the side.
Notes
For a vegetarian option, swap chicken for chickpeas or grilled halloumi. For a quicker prep, use pre-cooked rotisserie chicken.
