Greek Orzo Salad

Ingredients
1 cup orzo pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely chopped
1/2 cup feta cheese, crumbled
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons red wine vinegar
Salt and pepper to taste

Instructions
Cook
the orzo pasta according to package instructions; drain and let cool.
In
a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
In
a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
Pour
the dressing over the salad and toss to combine.
Serve
chilled or at room temperature.
Notes
Taste as you go and season boldly. Fresh parsley makes a real difference.
