Description

Deliciously easy Greek turkey meatballs served with lemon herb rice – the perfect dish for weeknights or impressing guests.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg, beaten
  • 1 tablespoon olive oil (for cooking)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Zest and juice of 1 lemon
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the turkey, breadcrumbs, Parmesan, parsley, garlic, oregano, salt, pepper, and egg until well combined.
  2. Shape the mixture into 1-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat. Cook the meatballs for 10 to 12 minutes, turning occasionally until browned and cooked through.
  4. Remove meatballs from the skillet and set aside to rest.
  5. In a medium saucepan, heat 1 tablespoon of olive oil and toast the rice for 2 to 3 minutes.
  6. Add chicken broth, lemon zest, and juice to the rice, stir, and bring to a boil. Cover and simmer for 15 to 20 minutes until the rice is cooked.
  7. Fluff the rice with a fork, stir in dill, and season with salt and pepper.
  8. Serve the rice on plates and top with turkey meatballs. Garnish with additional dill or parsley if desired.

Notes

For variations, add red pepper flakes for heat or substitute herbs to adjust the flavor.
