Ground Beef Enchiladas

Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions until translucent, about 5 to 7 minutes.
  3. Add minced garlic, cumin, and chili powder; sauté for another minute.
  4. Spoon the beef mixture onto each tortilla, roll tightly, and place seam side down in a greased baking dish.
  5. Pour enchilada sauce over the tortillas and sprinkle with cheese.
  6. Bake uncovered for 20 to 25 minutes until bubbly and golden.
  7. Let them sit a few minutes before serving.

  1. These enchiladas can be assembled ahead of time and refrigerated or frozen for meal prep. Perfect for busy nights!
