Description

A quick and satisfying dish featuring lean ground turkey and colorful bell peppers, perfect for a weeknight dinner.


Ingredients

  • 1 pound ground turkey
  • 2 bell peppers, any color, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Cooked rice, lettuce leaves, or taco shells for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic, and sauté until translucent.
  3. Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned.
  4. Stir in the chopped bell peppers, cumin, paprika, salt, and pepper. Cook until the peppers are tender.
  5. Serve over rice, in lettuce wraps, or as taco filling.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving. This dish can also be made ahead and stored in the fridge for meal prep.
