- 1 pound ground turkey
- 2 bell peppers, any color, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
- Cooked rice, lettuce leaves, or taco shells for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, and sauté until translucent.
- Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned.
- Stir in the chopped bell peppers, cumin, paprika, salt, and pepper. Cook until the peppers are tender.
- Serve over rice, in lettuce wraps, or as taco filling.
Notes
For extra flavor, add a squeeze of lime or hot sauce before serving. This dish can also be made ahead and stored in the fridge for meal prep.
