Ingredients
1 lb ground turkey
2 large potatoes, diced into bite-sized pieces
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish (optional)

Instructions
Heat olive oil in a skillet over medium heat until it shimmers, but not smoking.
Add chopped onions and minced garlic, sauté until softened.
Stir in the ground turkey, breaking it up as it cooks until browned. Season with salt and pepper.
Add diced potatoes and paprika, tossing to coat the potatoes in oil and spices.
Cover and cook for 15-20 minutes, stirring occasionally, until potatoes are tender.
Garnish with fresh parsley if desired and serve warm.
Notes
Great for leftovers and can easily be adapted with different vegetables or spices.
