Instructions
- Heat olive oil in a skillet over medium heat until it shimmers, but not smoking.
- Add chopped onions and minced garlic, sauté until softened.
- Stir in the ground turkey, breaking it up as it cooks until browned. Season with salt and pepper.
- Add diced potatoes and paprika, tossing to coat the potatoes in oil and spices.
- Cover and cook for 15-20 minutes, stirring occasionally, until potatoes are tender.
- Garnish with fresh parsley if desired and serve warm.
