Ground Turkey Zucchini Chickpea Skillet

Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, diced
  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Add ground turkey, and cook until browned and cooked through.
  4. Stir in diced zucchini and chickpeas, season with paprika, salt, and pepper.
  5. Cook for another 5-7 minutes until zucchini is tender.
  6. Garnish with fresh parsley and serve warm.

Notes

  1. For a heartier meal, serve with rice, quinoa, or pasta. This dish can be made ahead of time and stores well.
