- 1 lb ground turkey
- 2 medium zucchinis, diced
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and minced garlic, sauté until softened.
- Add ground turkey, and cook until browned and cooked through.
- Stir in diced zucchini and chickpeas, season with paprika, salt, and pepper.
- Cook for another 5-7 minutes until zucchini is tender.
- Garnish with fresh parsley and serve warm.
Notes
For a heartier meal, serve with rice, quinoa, or pasta. This dish can be made ahead of time and stores well.
