Ground Turkey and Zucchini Skillet

Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Peel and finely chop the onion.
  3. Add the chopped onion to the skillet and sauté until it becomes soft and translucent, about 3-4 minutes.
  4. Peel and mince the garlic cloves and add to the skillet, cooking for another 30 seconds until fragrant.
  5. Crumble the ground turkey into the skillet, breaking it up with a spoon as it cooks. Cook for 6-8 minutes until fully browned.
  6. While cooking turkey, wash and slice the zucchinis into half-moon shapes.
  7. Add the zucchini to the skillet and cook for 4-5 minutes until tender crisp.
  8. Sprinkle the dried oregano, salt, black pepper, and crushed red pepper over the skillet mixture.
  9. Pour the chicken broth into the skillet and stir to combine.
  10. Reduce heat to low and simmer for 3-4 minutes.
  11. Sprinkle the grated Parmesan cheese over the mixture and stir until melted and combined.
  12. Taste and adjust seasoning if needed, then serve immediately with extra Parmesan if desired.

Notes

  1. Feel free to substitute ground chicken or lean ground beef for the turkey, and adjust the spices to your liking.
