- 2 Chicken breasts
- 2 Sweet potatoes
- 1 cup Rice (brown, white, or jasmine)
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
- 1 cup Broccoli (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Dice the sweet potatoes and toss them in olive oil, salt, pepper, and paprika. Spread them on a baking sheet and roast for about 25 to 30 minutes until tender.
- Cook the rice according to package instructions.
- Season the chicken breasts with salt, pepper, and garlic powder. Cook in a skillet over medium heat until fully cooked and golden brown, about 6 to 7 minutes per side.
- Assemble the bowl by adding a layer of rice topped with roasted sweet potatoes and sliced chicken. Optionally, add steamed broccoli on top.
- Serve hot and enjoy your nourishing meal.
