Ingredients
1 cup oats
1/2 cup mixed nuts (e.g. almonds, walnuts, cashews)
1/2 cup mixed seeds (e.g. chia seeds, sunflower seeds, pumpkin seeds)
1/2 cup dried fruits (e.g. raisins, cranberries, apricots)
1/4 cup honey or maple syrup
1/4 cup nut butter (e.g. almond butter, peanut butter)
1/2 teaspoon vanilla extract
A pinch of salt

Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together the oats, nuts, seeds, and dried fruits.
In a separate bowl, whisk together the honey (or maple syrup), nut butter, vanilla extract, and salt until smooth.
Pour the wet mixture into the dry ingredients and mix until fully combined.
Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them slightly.
Bake for 12-15 minutes or until lightly golden.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
These cookies travel and freeze beautifully. Make a batch on Sunday for grab-and-go snacks. Do not overbake them; they firm up as they cool.
