- 1 cup oats
- 1/2 cup mixed nuts (e.g. almonds, walnuts, cashews)
- 1/2 cup mixed seeds (e.g. chia seeds, sunflower seeds, pumpkin seeds)
- 1/2 cup dried fruits (e.g. raisins, cranberries, apricots)
- 1/4 cup honey or maple syrup
- 1/4 cup nut butter (e.g. almond butter, peanut butter)
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, nuts, seeds, and dried fruits.
- In a separate bowl, whisk together the honey (or maple syrup), nut butter, vanilla extract, and salt until smooth.
- Pour the wet mixture into the dry ingredients and mix until fully combined.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them slightly.
- Bake for 12-15 minutes or until lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
These cookies travel and freeze beautifully. Make a batch on Sunday for grab-and-go snacks. Do not overbake them; they firm up as they cool.
