Ingredients

- 1 lb chicken breast, diced
- 1/2 cup orange juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 cups cooked brown rice or quinoa
- 1 cup steamed broccoli
- 1 cup diced cucumber
- 1 avocado, sliced
- Sesame seeds for garnish
- Green onions for garnish
Instructions
- In a bowl, combine orange juice, soy sauce, honey, garlic, and ginger. Add the diced chicken and marinate for at least 30 minutes.
- Heat a skillet over medium heat and cook the marinated chicken until fully cooked, caramelizing it a bit.
- In serving bowls, layer the cooked brown rice or quinoa, then add the cooked chicken, steamed broccoli, diced cucumber, and sliced avocado.
- Garnish with sesame seeds and chopped green onions before serving.
