Healthy Salsa Verde Chicken Casserole

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa verde
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup cooked quinoa or brown rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the chicken, salsa verde, black beans, corn, quinoa or rice, cumin, chili powder, salt, and pepper in a large bowl. Mix until well combined.
  3. Spread the mixture evenly in a greased 9x13 inch baking dish and pat down slightly.
  4. Top with shredded cheese.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  6. Garnish with fresh cilantro before serving. Enjoy!
