Healthy Salsa Verde Chicken Casserole

Ingredients
2 cups cooked chicken, shredded
1 cup salsa verde
1 can black beans, rinsed and drained
1 cup corn, frozen or canned
1 cup cooked quinoa or brown rice
1 cup shredded cheese (cheddar or Mexican blend)
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper, to taste
Fresh cilantro, for garnish

Instructions
Preheat
the oven to 375°F (190°C).
Combine
the chicken, salsa verde, black beans, corn, quinoa or rice, cumin, chili powder, salt, and pepper in a large bowl. Mix until well combined.
Spread
the mixture evenly in a greased 9x13 inch baking dish and pat down slightly.
Top
with shredded cheese.
Bake
for 25-30 minutes or until the cheese is bubbly and golden.
Garnish
with fresh cilantro before serving. Enjoy!
