Description

Delicious and hearty muffins packed with protein, fiber, and blueberries, perfect for breakfast or a healthy snack.


Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup protein powder, any flavor
  • 1/2 cup sugar or honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt, plain or vanilla
  • 2 large eggs
  • 1 cup blueberries, fresh or frozen
  • 1/4 cup milk or almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, mix together the whole wheat flour, oats, protein powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine Greek yogurt, eggs, milk, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before removing from the tin. Enjoy!

Notes

For best results, do not overmix the batter and preheat the oven properly.
