Ingredients
2 cups cooked brown rice
1 cup cooked chicken, diced
1 cup mixed vegetables (peas, carrots, bell peppers)
2 eggs, beaten
3 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, chopped
Salt and pepper to taste

Instructions
Heat sesame oil in a large skillet over medium heat.
Add mixed vegetables and cook until tender, about 3-4 minutes.
Push vegetables to the side and pour in beaten eggs; scramble until cooked.
Fold the eggs into the vegetables.
Add diced chicken and cooked brown rice, mixing well.
Pour in soy sauce and heat through, adjusting salt and pepper to taste.
Add chopped green onions and serve hot.
Notes
Use day-old rice for best texture. Feel free to customize with leftover veggies or protein.
