Ingredients

- 2 cups cooked brown rice
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add mixed vegetables and cook until tender, about 3-4 minutes.
- Push vegetables to the side and pour in beaten eggs; scramble until cooked.
- Fold the eggs into the vegetables.
- Add diced chicken and cooked brown rice, mixing well.
- Pour in soy sauce and heat through, adjusting salt and pepper to taste.
- Add chopped green onions and serve hot.
Notes
Use day-old rice for best texture. Feel free to customize with leftover veggies or protein.
