Ingredients
1 low-carb tortilla
1/2 cup cooked, shredded chicken
2 tablespoons Greek yogurt
2 Laughing Cow cheese wedges
1 tablespoon ranch seasoning (optional)
Olive oil or cooking spray (for frying)

Instructions
Heat a non-stick skillet over medium heat and lightly grease with olive oil or cooking spray.
In a bowl, mix together the chicken, Greek yogurt, and ranch seasoning if using.
Spread the chicken mixture evenly over one half of the low-carb tortilla.
Place the Laughing Cow cheese wedges on top of the chicken mixture.
Fold the tortilla in half to cover the filling.
Place the quesadilla in the skillet and cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
Remove from the skillet, slice, and serve warm.
Notes
For extra crunch, add shredded cabbage or thinly sliced bell pepper inside before folding.
