A quick and delicious high protein quesadilla filled with shredded chicken, Greek yogurt, and gooey cheese, perfect for a fast meal.
Ingredients

- 1 low-carb tortilla
- 1/2 cup cooked, shredded chicken
- 2 tablespoons Greek yogurt
- 2 Laughing Cow cheese wedges
- 1 tablespoon ranch seasoning (optional)
- Olive oil or cooking spray (for frying)
Instructions
- Heat a non-stick skillet over medium heat and lightly grease with olive oil or cooking spray.
- In a bowl, mix together the chicken, Greek yogurt, and ranch seasoning if using.
- Spread the chicken mixture evenly over one half of the low-carb tortilla.
- Place the Laughing Cow cheese wedges on top of the chicken mixture.
- Fold the tortilla in half to cover the filling.
- Place the quesadilla in the skillet and cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
- Remove from the skillet, slice, and serve warm.
Notes
For extra crunch, add shredded cabbage or thinly sliced bell pepper inside before folding.
