Ingredients
1 cup egg whites
1/2 cup cottage cheese
1/4 cup chopped vegetables (bell peppers, spinach, or onions)
1/4 cup shredded cheese (optional)
Salt and pepper to taste

Instructions
Preheat the oven to 350°F (175°C).
In a bowl, whisk together the egg whites and cottage cheese until well combined.
Stir in the chopped vegetables and cheese, if using.
Season the mixture with salt and pepper.
Lightly grease a muffin tin with non-stick cooking spray.
Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 15-20 minutes or until the bites are firm and lightly golden.
Allow to cool for a few minutes before removing from the tin.
Enjoy warm or store them in the fridge for a quick snack.
