High Protein Egg White Bites

Ingredients

  • 1 cup egg whites
  • 1/2 cup cottage cheese
  • 1/4 cup chopped vegetables (bell peppers, spinach, or onions)
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the egg whites and cottage cheese until well combined.
  3. Stir in the chopped vegetables and cheese, if using.
  4. Season the mixture with salt and pepper.
  5. Lightly grease a muffin tin with non-stick cooking spray.
  6. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 15-20 minutes or until the bites are firm and lightly golden.
  8. Allow to cool for a few minutes before removing from the tin.
  9. Enjoy warm or store them in the fridge for a quick snack.

Notes

  1. These bites are flexible; feel free to add your choice of vegetables or protein. They freeze well for later use.
